Mini Midnight Vegan Pie!

I Only decided to named Mini Midnight Vegan Midnight Pie what is it because I decided to make it at midnight, in a mini pie pan! But it is also 100% Vegan. Only using coconut oil in the crust! I had a bunch of apples left over so I peeled them and cut them into into little squares! For this mini pie I used

4 whole small-medium sized red delicious, peeled and cut into squares

1/2 cup-1 cup of Brown Sugar

1-3 teaspoons of cinnamon

First Pre-heat oven to 375 degrees

(Now this is all depending on your liking) I stuffed my pie over the top with apples and probably used a little more cinnamon then what I posted, but it’s all up to your liking and again this pie was a made at midnight on a whim so I apologize if it doesn’t turn out to some of your liking as I once again didn’t measure anything!

For the crust

Roughly

2 cups Bobs Red Mill Organic All Purpose Flour

1/2 teaspoon salt

2/3 cup coconut oil

1/4-1/2 cup of Ice Water

Mix the flour and salt with whisk or fork until combined. Then add your coconut oil and mix as you would butter until your consistency is crumbly and even spread. Then you can add your ice water and mix until combined to a regular pie doe consistency and put in between two pieces of parchment/wax paper rolling out to a 1/4 inch thick or thinner if you choose(for preference or for making even smaller pies in cupcake pans) and store in the fridge for roughly 30 minutes.

Remove and line the base pie pan (after lightly spraying with coconut oil) and mold to fit with your fingers. Then adding all your apples and re folding your pie dough and rolling out the top. Once you have a piece to fit over all your apples place on top and begin to secure the edges again using your fingers to make sure it binds, following behind with a fork to secure the top crust to bottom crust making sure the apples stay in place while baking.

Poke a few holes in the top with a fork and place in the oven for 60-90 minutes putting foil over the top once the crust is to a desired color(roughly 30-45minutes)

Remove let cool and enjoy!
